All Chardonnays do not have to be fermented and aged in oak barrels. We know that many are fermented in stainless steel tanks. Fermenting in cement tanks is not really new, but rarely done. Caymus Vineyards, at their Mer Soleil Vineyard, produces two Chardonnays - one barrel-fermented and one, called Silver, which is fermented 100% in cement tanks.

The excellent unoaked Silver is packaged in limited-edition ceramic bottles that the back label tells us "are meant to reflect the cement vessels that we use when fermenting and aging Silver Chardonnay. This wine sees no wood, helping to maintain the bright fruit characters and minerality produced from the chardonnay grapes in our Mer Soleil vineyard in the Santa Lucia Highlands. "

Not only does the Silver look good . . . it tastes great, too! It is light gold in color with floral spice, green apples and citrus in the nose. The flavors of peaches, nectarines and tangerines are amazingly creamy for a Chardonnay that sees no oak. It looks light, but has impressively rich, luscious flavors. It is so easy to drink that you'll always find yourself asking for more.
